A lot of stats in EraTW works with the "Gems system". Specifically most of the "H abilities" (except Servitude and Endurance),"Sensivity" and the marks' system do.
This system isn't especially hard to understand, but it can be confusing for a new player.
It is composed of "Palam", "levels of Palam" and "gems".
Palam
Palam are points that NPCs gains each time you have an interaction with them. The type and amount of Palam gained depends on the interaction done, and its context.
E.g.: Some sexual harassment commands will make the character gain Hostility Palam (among others), but if your relastionship with them is developed enough, the gain will be decreased, to a point where it could be nearly nonexistent.
The amount of Palam a character has can be seen on the right of each blue bar.
Here, you can see that Reimu has no Palam, meaning that I didn't interacted with her at all.
You will see how much of Palam a character has gained at the end of the action :
At the bottom of the screen, you can see that Reimu gained 255 Palam of "Care", as well as others, after I talked with her one time.
Palam are reset after each day.
Levels of Palam
When a character gains enough Palam, they will gain a "level of Palam". You can visualize how far a character is from gaining a new level of Palam thanks to the blue bars. You can also see their current level of Palam thanks to "Lv x" next to the name of the Palam concerned.

Level of Palam are reset after each day.
Gems
When a character gains a level of Palam, they will also gain a number of "Gems".
These gems are how the stats mentionned earlier will gain levels themselves.
Gems will be actually counted after the player go to sleep. If the character has enough of a particular gem, they will gain a level in the concerned stat.
E.g. : with enough "Favor" gems gained by increasing the level of "Care" Palam, the level of "Intimacy" of the character will be increased after the player has gone to sleep.
Gems doesn't reset after each day. They're instead added to the character, and define if they will gain a level in the concerned stat.
E.g.: if a character gains 75 gems of Favor on day 1 and 110 on day 2, they will have 185 when day 3 will start.
